Monkey Cave Tea, or Old Tree Shui Xiang Tea originates from the Monkey Cave on Wuyi Mountain, and comes from an eighty-year-old tea tree. It has been aging for six years, and the older the tea, the smoother and mellow the taste. Monkey Cave Tea is a type of Wuyi Rock Tea, and Wuyi Rock Tea is commonly known as oolong tea, one of the six major types of teas in China. (The six major types of Chinese teas are black tea, green tea, oolong tea, yellow tea, white tea, and dark tea).
Monkey Cave Tea is a semi-fermented tea, where at the beginning of the production process, leaves are rubbed together and show a "three red, seven green" feature. This means that 30% of the leaf is red along the side, while 70% is green. However, after baking, this characteristic of "green leaf with red edge" is no longer obvious. Oolong tea has an oxidation time between that of black and green tea. Oolong tea has mild properties. It’s not bitter, green, or tastes like green tea. It doesn’t have the heat of fully fermented black tea.
