How to make Flat bread? By Maryna

🌾 350 g flour (Flat bread from one degree sprouted spelt flour)

💦 200 ml boiling water

🧈 2 tablespoons oil

🧂 1 teaspoon salt

Making it, almost like a meditation:

1. Kneading:

In a large bowl, combine the flour and salt. Make a small well in the middle. Slowly pour in the hot boiling water in a thin stream, followed by the oil. Start mixing with a spoon, then use your hands. Knead until you have a soft but non-sticky dough.

2. Resting:

Wrap the dough in plastic wrap or simply cover the bowl so it doesn’t feel neglected. Let it rest for 20–30 minutes. During this time, it will become even smoother and more pliable.

3. Forming the balls:

Divide the rested dough into 6–8 equal pieces. Roll each piece out on a lightly floured surface into a very, very thin circle. Don’t worry if it isn’t perfectly round — that only adds to its homemade charm. The thinner the dough, the softer the flat bread.

4. Heat a dry skillet over medium heat.

Once it’s hot, place the thin circle of dough in the pan. Cook for about 30–45 seconds on each side, until little golden-brown freckles appear and the dough starts to puff up with bubbles. Flip it over and cook the other side. The bread may puff up a little, and that’s perfectly normal — it will still stay soft.

5. Keeping them soft:

As soon as the flat bread is cooked, stack the pieces on top of each other and wrap them in a clean kitchen towel.

And… there it is — a little piece of sunshine. ☀️
